Tom and I cook several meals on Sunday and eat mostly leftovers all week. He's being such a trooper about this change in my diet and we're making some adjustments so he can continue to eat a few things that I don't, namely quinoa, farrow, dairy products, beer and the occasional chocolate. Without further ado, this is what we have for this week:
Coleslaw
Shredded savoy cabbage, carrots, yellow and green squash, red bell peppers, Italian parsley, with rice vinegar, toasted sesame oil, a little mayonnaise (not homemade but the ingredients were all ok -- eggs, vinegar, oil, salt), salt, fresh minced ginger (on ultra fine setting on microplane).
Rotisserie chicken (no hormone bird)
Roast pork shoulder with herb and garlic rub served with fruit reduction (port, white wine, fresh apple, dried apricots, honey, red grapefruit juice)
Brussels sprouts with grapefruit zest, pinenuts and bacon.
Baked and mashed garnet yams with coconut milk, fresh lime juice and salt.
Mon breakfast: Frittata with celery, onion, cherry tomatoes, chard. We had this for breakfast on Sunday and have leftovers for a couple more breakfasts during the week.
Breakfast Tue-Thur: Frozen blueberries, coconut milk and almonds.
Sun dinner: Pan fried trout and dinosaur kale.
Mon dinner: Beef burger patties with sauteed mirepoix, broiled asparagus and romaine salad with cheese-free cesar dressing.
Tue dinner: Twice cooked pork with savoy cabbage and dino kale (from roast pork butt we cooked on Sunday)
Wed dinner: Twice cooked pork with green beans.
Friday - Sunday wasn't as clean as I would have liked. In preparation for backpacking, I packed apples, salami (finally found some that didn't contain sugar), tins of sardines and herring, smoked salmon (also, finally found one without sugar), and some junk food in the form of kale chips and paleo macaroons, as well as nuts with unsweetened coconut flakes and raisins. We ate out a couple of times while on the road. The most questionable things I consumed were 1 pork rib (coated with sugary BBQ sauce), two glasses of wine and a couple of garlic fries. I ate way too many nuts and macaroons and hence got yucky belly. I think it's best for me to avoid the snacks and sinless desserts, especially if it's for a trip like this. The first thing I reach for is the ready to eat sweet items.
