Paleo menu for the week of October 9, 2011.

No-bean chili with ground beef and sirloin, tomatoes, various color bell peppers, onions, dried chipotle pepper, red wine, a bit of unsweetened cocoa powder, cayenne, salt and pepper.  This stuff is amazing.  Go Tommy!

Baked spaghetti squash (with a bit of coconut oil and salt) - I'm trying to like this stuff and thought it would be a nice backdrop to the chili but it's not my favorite thing to eat.  Okay, I really have to choke it down.  It's boring and I don't think I'll make it again.

Tommy's chicken soup for the soul with carrots, celery, onions, kale, lemon juice and lots of love.  This is super yummy and hearty and we have tons.

Mashed sweet potatoes with lime juice and coconut milk.

Brussels sprouts sauteed with lemon zest and pine nuts.  We usually make these with bacon.  They're yummy without too.

Chia pudding - I tried one small batch with coconut milk, dash of cinnamon and a bit of honey.  We ate that pretty quickly.  The next day I made a larger batch with coconut milk, cinnamon, ground ginger, bit of honey, frozen blueberries and a glug of strawberry kombucha.  I confess, I also added one crushed coconut macaroon from Laughing Giraffe.  I'm not buying anymore of these little paleo carb bombs but I figure one crumbled into a batch that makes about 6 servings is not too  bad.  This second concoction seems a little thick so far but that's an easy fix.  I don't love chia pudding but it's not bad and I miss my morning yogurt, so having something mushy as a substitute is kind of nice.

Breakfast Monday:
2 hard boiled eggs, 2 figs
Snacks: raw fennel, celery and cherry tomatoes, apple
